Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Season both sides of the chicken breasts with salt and pepper.
  • Sear the chicken for about 5–7 minutes per side until golden brown. Remove from skillet and set aside.

Sauce Preparation

  • In the same skillet, add the remaining butter and minced garlic. Sauté until fragrant, about 1 minute.
  • Add heavy cream and Dijon mustard, stirring to combine. Bring to a gentle simmer until sauce thickens.
  • Return the browned chicken to the skillet, spooning the sauce over it.

Roasting Vegetables

  • In a baking dish, toss the halved potatoes and asparagus with olive oil, salt, and pepper. Roast in the oven for about 20 minutes, or until tender.

Serving

  • Serve the creamy chicken alongside the roasted vegetables and garnish with fresh parsley.

Notes

This meal is especially delicious the next day, and pairs beautifully with a light white wine. Store leftovers in an airtight container in the fridge for up to 3 days.
