Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onions turn translucent and everything smells divine (about 3-5 minutes).
  • Add the diced potatoes and chopped cabbage to the pot. Stir to combine and cook for another 4-5 minutes, allowing the potatoes to start softening.
  • Pour in the vegetable or chicken broth and bring to a boil. Once boiling, reduce the heat and let it simmer for about 20 minutes until the potatoes and cabbage are tender.
  • Stir in the heavy cream. Season with salt and pepper to taste. Mix well before serving.
  • Ladle the soup into bowls and garnish with herbs. Serve warm.

Notes

For a smoother texture, blend the soup with an immersion blender. Store leftovers in an airtight container for up to 4 days.
