  • 2 lbs chicken breasts Feel free to use chicken thighs for juicier meat.
  • 4 cups chicken broth Low-sodium preferred for salt control.
  • 1 packet ranch seasoning mix Don't skimp on this for flavor.
  • 8 oz cream cheese Make sure it’s softened.
  • 1 cup shredded cheddar cheese Smoked cheddar can be used for more flavor.
  • 1 cup chopped green onions Adds freshness to the soup.
  • Salt and pepper To taste.

Cooking

  • In a large pot, combine chicken breasts, chicken broth, and ranch seasoning. Bring to a boil.
  • Reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  • Remove chicken, shred it, and return it to the pot.
  • Add cream cheese and stir until melted and well combined.
  • Stir in shredded cheddar cheese and chopped green onions.
  • Season with salt and pepper to taste, and serve hot.

Notes

For best results, serve immediately. Leftovers can be stored in the fridge for 3-4 days and reheated.
