  • 1 cup mixed vegetables (carrots, peas, corn) Packed with nutrients and colors.
  • 1 can cream of chicken soup Store-bought version is recommended for ease.
  • 1 cup shredded cheese (like cheddar or mozzarella) Don’t overdo it; we want it melty.
  • 1 cup chicken broth Keeps everything moist.
  • 1 teaspoon garlic powder Garlic is the secret to happiness.
  • 1 teaspoon dried thyme or Italian seasoning Adds a bouquet of flavor.
  • to taste salt and pepper A little seasoning goes a long way.
  • 1 sleeve Ritz crackers, crushed Gives a delightful crunch on top.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine cooked chicken, mixed veggies, cream of chicken soup, chicken broth, garlic powder, thyme, salt, and pepper.
  • Pour the mixture into a 9x13 inch baking dish, flatten it out evenly, and then sprinkle half the shredded cheese on top.
  • Crush the Ritz crackers and sprinkle them over the cheese layer.

Baking

  • Bake the casserole for 25-30 minutes or until it’s bubbly and golden brown.
  • Allow to cool for a few minutes before serving.

Notes

For best results, let it rest for 5-10 minutes after baking to avoid spilling fillings. Can substitute chicken with chickpeas for a vegetarian option.
