Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 0.25 cup olive oil
  • 0.25 cup fresh lime juice
  • 2 teaspoons lime zest
  • 3 cloves garlic, minced
  • 0.25 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • to taste salt
  • to taste black pepper

Instructions
 

  • In a mixing bowl, whisk together olive oil, fresh lime juice, lime zest, minced garlic, chopped cilantro, cumin, chili powder, salt, and black pepper.
  • Place chicken breasts in a resealable bag or shallow dish. Pour marinade over chicken, ensuring all pieces are coated. Seal and refrigerate for at least 30 minutes, up to 2 hours.
  • Preheat grill or skillet over medium-high heat. Remove chicken from marinade and discard marinade.
  • Cook chicken for 6 to 7 minutes per side or until the internal temperature reaches 165°F (74°C).
  • Remove from heat and let rest for 5 minutes before slicing.
  • Garnish with extra chopped cilantro and lime wedges, if desired. Serve warm.
