Ingredients
  

  • 8 oz fettuccine or penne pasta
  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced tomatoes (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley for garnish
  • 1 tbsp lemon wedges for garnish (optional)

Instructions
 

  • Cook the pasta according to package instructions. Drain and set aside.
  • Toss the shrimp with Cajun seasoning until evenly coated.
  • In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook for 1-2 minutes per side, until pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, melt butter and sauté the minced garlic for 1 minute, or until fragrant.
  • Add the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese and diced tomatoes (if using), allowing the sauce to thicken slightly.
  • Return the cooked shrimp to the skillet and toss to coat. Add the cooked pasta and stir to combine, ensuring everything is well-coated in the creamy sauce.
  • Season with salt, black pepper, and more Cajun seasoning if desired.
  • Garnish with chopped parsley and lemon wedges if desired. Serve immediately.
