Preparation

  • Toast the rice in a medium saucepan over medium heat for about 1-2 minutes until golden.
  • Add chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15-18 minutes until liquid is absorbed.
  • In a big skillet, cook chopped turkey bacon until crispy, then remove.
  • In the same skillet, brown the sliced beef sausage for 3-4 minutes and then remove.
  • Sauté diced onion, celery, and bell pepper in the skillet for 5-6 minutes, then add minced garlic.
  • Add Cajun seasoning, smoked paprika, dried thyme, cayenne, salt, and pepper, stirring for 30 seconds.
  • Return bacon and sausage to skillet, add the rice, and toss until well combined.
  • Create a well in the center, add shrimp, season lightly, and cook for 1-2 minutes per side until opaque.
  • Let the skillet sit for 2 minutes to meld flavors, then garnish with green onions and parsley.

Notes

Store in an airtight container in the fridge for 3-4 days, reheat with a splash of water to prevent dryness.
