Pat chicken dry and cut into bite-sized pieces. Season with salt, pepper, garlic powder, and paprika.
Prepare three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
Dip each chicken piece first in flour, then in eggs, then coat with breadcrumbs. Place on a plate.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
Fry chicken in batches for 4–5 minutes or until golden brown and cooked through. Drain on paper towels.
In a large bowl, mix buffalo sauce with melted butter. Toss fried chicken bites in the sauce until coated.
Serve hot with ranch or blue cheese dressing and celery sticks if desired.
