Buffalo Chicken Bites

Buffalo Chicken Bites are crispy, spicy, and utterly addictive! Bite-sized pieces of juicy chicken are breaded, fried until golden, and tossed in zesty buffalo sauce for the ultimate game-day snack or party appetizer. Serve with ranch or blue cheese for dipping.

Ingredients
  

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko preferred)
  • 1/2 cup buffalo wing sauce
  • 2 tbsp unsalted butter, melted
  • vegetable oil, for frying
  • ranch or blue cheese dressing, for serving (optional)
  • celery sticks, for serving (optional)

Instructions
 

  • Pat chicken dry and cut into bite-sized pieces. Season with salt, pepper, garlic powder, and paprika.
  • Prepare three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
  • Dip each chicken piece first in flour, then in eggs, then coat with breadcrumbs. Place on a plate.
  • Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  • Fry chicken in batches for 4–5 minutes or until golden brown and cooked through. Drain on paper towels.
  • In a large bowl, mix buffalo sauce with melted butter. Toss fried chicken bites in the sauce until coated.
  • Serve hot with ranch or blue cheese dressing and celery sticks if desired.
