A fast, no-bake party snack that tastes like funfetti cake in crunchy, sweet bites. Rice Chex gets coated in warm vanilla-white chocolate, tossed with heat-treated cake mix and powdered sugar, then finished with rainbow sprinkles for the ultimate celebration mix.
1/4cupunsalted butter, cut into pieces (or 1 tablespoon vegetable oil)
1teaspoonvanilla extract
1 1/2cupsdry white or yellow cake mix, heat-treated and cooled
1/2cuppowdered sugar
1/4cuprainbow sprinkles (jimmies or confetti style)
pinch of fine salt (optional, to balance sweetness)
Instructions
Line a baking sheet with parchment. Add the Rice Chex to a very large mixing bowl.
Heat-treat the cake mix for safety: spread it on a parchment-lined baking sheet and bake at 350°F (175°C) for 5 minutes. Cool completely and break up any small clumps.
In a microwave-safe bowl, combine white chocolate chips and butter. Microwave in 30-second bursts, stirring well between each, until melted and smooth (about 1–2 minutes total). If using candy coating, melt according to package directions.
Stir in the vanilla extract and a small pinch of salt (optional) until the coating is glossy and fragrant.
Pour the warm coating over the cereal. Use a rubber spatula to gently fold until all pieces are evenly coated without crushing the cereal.
In a large zip-top bag, combine the cooled, heat-treated cake mix and powdered sugar. Add the coated cereal, seal, and shake until every piece is evenly covered and matte.
Spread the puppy chow onto the prepared baking sheet and let cool until the coating is set, 10–15 minutes. Sprinkle the rainbow sprinkles over the cooled mix and toss gently to distribute.
Serve immediately or store in an airtight container at room temperature for up to 5 days.
